Welcome and hello,
My name is Emily, I’m a baker, cook, writer & mum to Charlie. I’m 37, formerly of award-winning bakery, Twelve Triangles as well as co-author of Kitchen Table. I live in an old steading in the Scottish Borders with my family. At the start of the year I left Twelve Triangles and began a new adventure. I am planning on building a bakery school, food studio and mill at my home, here I will bake bread for my community with local flour I have (hopefully milled myself), invite people to come stay, learn cook and bake with me as well as write. I have no idea how this is all going to work but I hope you will join me for the journey to find out.
What I do.
Here I write to you weekly from my steading in the Scottish borders. Telling stories about food and ingredients alongside my slightly obsessive recipe development. I am here to give you the tools to understand how or why things work in recipes. This is to help you build confidence in the kitchen as well as being able to alter recipes to suit your own time schedules and tastes. I believe cooking and baking need to work for you.
Why subscribe?
This Substack is about nostalgia, food, memories, connection and humanity. A simpler way of living with food at the core. Where does food come from? Who are you making it with? Why are you making it? What can food do? Who is eating it? Where were you in your life whilst you were eating this food? These are questions I think about daily and they inform how I live and work. I can be found in my kitchen most of the time as its both my sanctuary and my job. I believe in community, with food being the very real beating bloody heart of it.
